Chef Aaron has a unique heritage with ancestry from China, Thailand, Holland and America. This mirrors his culinary style which is distinctively Asian, tempered with modern French cooking techniques.

He was amongst a select few who were handpicked to work in New York alongside Chef Daniel Bouloud. Chef Aaron was Executive Sous Chef at the Capella Singapore, before joining his alma mater as the Assistant Manager of the EasyChefLab, a facility for conducting leisure and short programmes. The academy has won many competitions under his mentorship such as the Dilmah T3 Global Competition, Real California Milk Competition and the World’s 50 Best Culinary Challenge.

In his work with GlobalData, Tim provides economic forecasts, consumer insights, channel assessments and business trends to companies looking to expand their business footprint in the South East Asian region.

Tim has worked in B2B research and media in Asia since 1992 with organisations such as the Economist Intelligence Unit, Ipsos Business Consulting and Eco-Business. Recent studies and publications include the rise of food delivery in Asean, single-use plastic in food packaging, the regional transition to a low carbon economy and the Asean Economic Community.

His opinion pieces and articles have been published in Eco-Business, The Business Times and the Straits Times as well as other regional newspapers. He is a regular speaker and conference moderator for industry and client events.

Prior to this, he was a Captain in the British Army where he was awarded campaign medals for active service with the UN Peacekeeping Force in Cyprus and coalition forces in Operation Desert Storm, Iraq.

He has an MBA from Henley Business School in UK, and is a registered consultant with the Institute of Management Consultants Singapore.

Starting from waiting tables in 1995, Alex went on to be part of hotel opening teams of brands of their first in SEA – Marriott, The St Regis and Capella Hotels. After a 12year absence, he was part of Westin’s brand return to Singapore. He has been involved in opening or conversion of properties across Asia Pacific, lending advice and experience.

Alex is the current president of the Hospitality Purchasing Association which holds membership of over 100 professionals. He holds an MBA, University of Leicester (2004) and is a member of Mensa International (1991). He is a panel judge in ProcureCon Asia 2019.
